Effect of Addition of Green Bean Flour to Organoleptic Quality, Fiber Level and Acceptability of Banana Nugget

ABSTRACT
Banana nuggets are modern snacks made from bananas that only contain energy and contain less other nutrients, especially fiber. One effort to improve nutritional quality, by adding green bean flour. The purpose of this study was to determine the effect of adding green bean flour to organoleptic quality, fiber content and acceptability of banana nuggets.
This type of research is an experiment using a completely randomized design (CRD) design consisting of four treatments and two repetitions. The treatment is the addition of green bean flour 0 gr (A), 95 gr (B), 100 gr (C), 105 gr (D). Observations were made on organoleptic quality, fiber content, and acceptability of the best banana nuggets. Processing data using Variety Test (ANOVA) and continued with DNMRT test at 5% level if the results are significantly different. Organoleptic tests were carried out at the Food Technology Lab (ITP) of the Nutrition Department of the Padang Polytechnic, fiber content testing at the Lab Faculty of Animal Husbandry UNAND Padang.
The organoleptic test results in getting the best treatment were treatment B with an average value of 3.14, with fiber content of 3.83%. Banana nuggets can be acecepted by the target elementary school children. The results showed that the addition of green bean flour did not significantly affect taste and aroma, but significantly affected the color and texture of the nuggets.
It is recommended in making green bean flour banana nugget using 95 grams of addition and using substitution in wheat flour with the aim of reducing the amount of flour which will have an impact on the texture of the resulting nugget.
