ABSTRACT
Healthy and safe food is one of the important factors to improve the health status of the community. The problem of food sanitation is very important, especially in public places that are closely related to services for many people, one of which is a hospital. Based on Minister of Health Decree No. 1204 / Menkes / SK / X / 2004 concerning hospital environmental health requirements, food handlers must meet the requirements must be healthy and free from infectious diseases, must use work clothes and kitchen food processing protective equipment and always wash hands and after discharge from the restroom.
This type of research is descriptive, conducted in December 2018 - May 2019. Research objects are food processing, food processing equipment, food handler personal hygiene, food transportation, and food presentation. Primary data is obtained from the checklist table and direct observation to obtain food processing sanitation hygiene information in the nutrition installation.
The results of the study were obtained from 5 variables namely food processing for (70.53%), food processing equipment for (76.92%), food handler personal hygiene by (100%) with 9 food handlers, food transportation as big as (66, 66%), and the serving of food is (75%).
It is expected that food handlers to keep the floor clean and not slippery, natural ventilation should be added with mechanical ventilation, the nutrition installation coordinator provides and pays attention to the use of masks, aprons, gloves and headgear used by food handlers, to handlers to further improve the basic principles of hygiene sanitation in transportation and presentation so that touching food that is ready to be served is protected from germs and other causes of disease and uses trolly or closed stroller in the transportation of food and presentation to hospital patients.
