ABSTRACT

Food handlers are people who are directly related to food and equipment ranging from the preparation, cleaning, processing, transportation to presentation. Food handler Nasi Kapau at the Lereng Market is still found by handwriters to wash their hands repeatedly with water, food not closed, aprons not clean, wearing jewelry when serving food, wiping hands using a clean cloth and washing equipment not with running water and not suitable with Kepmenkes No 1098/Menkes/SK/VII/2003 About Sanitation Restaurant and restaurant hygiene requirements. The purpose of this study was to see a description of the behavior of food handlers Rice Kapau in the Slope Market of the City of Bukittinggi, West Sumatra Province in 2019.

This type of research is descriptive, carried out from January to March 2019. Research samples are food handlers Rice Kapau numbered 24 people. Primary data were obtained from interviews and observations with food handlers using questionnaires and checklist tables to obtain information about the knowledge, attitudes and actions of food handlers

The results of the study were obtained from 24 speakers of Rice Kapau about serving food, washing utensils and personal hygiene obtained by 13 knowledgeable masters (54.2%),positive attitude as many as 14 handlers (58.3%), good actions as many as 13 handlers (54.2%) bad behavior as many as 13 people (54.2%).

It is recommended that the Office of Cooperatives, SMEs and Trade be able to maintain and monitor sanitation hygiene and behavior of handlers and for handlers should always prioritize cleanliness and correct behavior when serving and washing food equipment.
