ABSTRACT
Formalin is one of toxic and dangerous preservatives for human. High formalin content in body can cause stomach irritation, allergic, carcinogenic and mutagenic (causing changes in cell and tissue function). Based on BPOM 2017 annual report mention that of of 8,950 foods that were thought to contain dangerous ingredients, 192 samples contained formalin. The purpose of this study was to determine the effect of soaking tofu in acid vinegar solution concentration variation at 400 C for 15 minutes in reducing formalin levels
The research is experimental with a randomized pre-post-test control group design. Sampling of white tofu was done at Passar Nanggalo in Padang City and the experiment was conducted on January until June 2019. Data was analyzed using a simple linear regression test.

From the research that has been carried out, it was found that there was a decrease in the level of tofu formalin after soaking in acid vinegar solution concentration of 2.2%, 3.3%, 5%, 7.5%, and 11.25% at 400C for 15 minutes. vinegar acid 5%. The statistical test results obtained p value = 0.00 where at alpha 5% it was significant, meaning there was a difference in the decrease in formalin levels in knowing between the five concentrations of vinegar solution

From the results of the study it can be concluded that there is an effect of soaking in vinegar acid to reduce the formalin content in tofu. Efforts that can be made are that the community should be careful in choosing tofu sold in the market and do the treatment to reduce the levels of formaldehyde in tofu such as using a 5% concentration of vinegar acid in 400C( warm temperatures).
